Grilled Peach Yogurt Parfait

Peach yogurt parfait

Peaches are one of our favorite summer fruits, especially when you get a perfectly juicy and sweet one. Typically they’re consumed by themselves, thrown into a smoothie (try our peach smoothie) or used in a dessert such as the famous peach cobbler.

Today I’m encouraging you to make a grilled peach yogurt parfait. This fruit yogurt parfait is easy to make and stunningly delicious. It also dresses up the breakfast experience, as it’s a beauty to behold and consume!

Key Parfait Ingredients

It starts with the peach. A low-calorie, low-sugar summer fruit, it comes packed with great antioxidants, including all five classifications of carotenoids. It’s also a high-fiber food that can help fill you up in the morning. The grilled variety also brings out even more of its flavor.

A great parfait needs a quality, creamy yogurt. If you’re going dairy-free, choose coconut yogurt that’s full of healthy fats. If you do dairy, consider Greek yogurt that’s naturally higher in protein.

You have plenty of wiggle room with the granola you choose. Ideally, it’s relatively low in sugar. I prefer a gluten-free almond granola. You can also make your own, such as a chocolate keto granola.

Optionally, drizzle some raw honey on top for additional sweetness and some beneficial enzymes.

How to Make a Layered Yogurt Parfait

Heat a grill pan or griddle over medium-high heat and brush the pan with olive or coconut oil. Slice the peaches in half and remove the pit. Note that there is no need to peel the peach. After grilling, the skin will easily fall off.

Yogurt parfait process

Place the peaches in the middle of the pan, cut side down and allow to cook for 4 minutes, or until golden and grill marks are noticeable. Turn them over and cook for an additional 2-3 minutes on the skin side. 

Grilling peaches not only brings out that flavor in case you have a less ripe peach, it also softens it a bit in case you also have a hard one on your hands. Consider it a win-win.

Remove from the heat and allow to cool before cutting into small chunks.

Next get ready to assemble the fruit parfait in a layered fashion. Get out a large glass, such as a fancy parfait glass or just a plain ole pint glass.

First, as the add one-third cup yogurt, two tablespoons granola and chopped peaches. Then add another one-third cup yogurt, two tablespoons granola and top with remaining peaches. Top with honey if desired. 

Start to eat right away or store in the refrigerator.

The parfait can be stored in an airtight container in the refrigerator for up to three days. The granola will become slightly less firm over time.

Among so many fruit-based breakfasts, the yogurt parfait is largely overlooked because it seems tricky. Here, using a grilled peach, it's easy and fun to put together … and it's absolutely delicious.

Ingredients
  • 1 tablespoon olive oil

  • 1 firm peach, pitted and sliced in half

  • ⅔ cup dairy-free coconut yogurt or plain Greek yogurt

  • 4 tablespoons gluten-free almond granola 

  • raw honey, optional

Directions
  1. Heat a grill pan or griddle over medium-high heat and brush the pan with oil. Slice the peaches in half and remove the pit.

  4. Assemble the parfait: Add ⅓ cup yogurt, 2 tablespoons granola and chopped peaches. Then add another ⅓ cup yogurt, 2 tablespoons granola and top with remaining peaches.

  5. Top with honey if desired. 

  6. Serve immediately or store in the refrigerator.
