Frozen Apple Pie Bars

The apple pie is a treasured Fall dessert, but while it’s still warm in many parts of the U.S., some of us still prefer the colder dessert. Here comes apple pie bars, aka apple pie creamsicles.
This health-minded treat uses a sweet apple filling and a rich cashew-coconut base alongside natural sweeteners. The secret ingredient is Ancient Nutrition’s Whey Protein + Fat Loss Blend powder, an easy-to-digest whey designed to help you burn calories, increase your metabolism and build lean muscle.

Each bar is a perfect-sized snack/dessert with 264 calories, 23 grams of carbohydrates, 17 grams of fat and 8 grams of protein. Most ice cream bars will have more fat and less protein, for example.
Even better, these creamsicles are nutrition-rich, particularly in multiple minerals. Each one contains 55 percent Daily Value (DV) of manganese, 50 percent DV of copper, 24 percent DV magnesium and 20 percent DV of phosphorus.
Here are the important ingredients:
Apple: Low in calories yet high in fiber, they also provide the base for this dessert. The best apples for this bar are on the firmer side, such as Honeycrisp, Braeburn and Granny Smith. Pink Lady and Golden Delicious can also work.
Cinnamon: Full of antioxidants, Ceylon cinnamon (which is also featured in the Whey Protein) is considered the best variety.
Maple syrup: High in minerals and antioxidants, it’s considered one of the best natural sweeteners.
Almond butter: A healthy fat, almond butter also lends a nice flavor and helps with the chewy texture.
Cashews: Another healthy fat, cashews will combine with the coconut for a base that surrounds the apple pie goodness.
Coconut milk or coconut cream: The third natural fat can help with energy levels because of its medium-chain triglycerides. It’s also a top substitute for dairy-based cream.
Medjool dates: This second natural sweetener is also high in minerals and antioxidants.
Whey Protein + Fat Loss Blend powder: This grass-fed whey protein is sourced from cows that graze on natural pastures, resulting in milk that’s often richer in omega-3 fatty acids, CLA and essential vitamins.
To start, prepare the apple mixture. In a small saucepan, stir together the chopped apple with the cinnamon, maple syrup, water and almond butter. As the mixture simmers gently over low heat, the apples soften and release their natural sweetness while the cinnamon and maple create a warm, fragrant aroma.
Stir occasionally to keep everything smooth and glossy, then remove from the heat once the apples are tender. Set it aside to cool completely before layering.
Next, make the cashew cream base. Note that the cashews need to be soaked (cold water will do) for at least two hours for the best creamy consistency, and the dates should soak as well.
For the dates, place the pitted dates in a small bowl and cover them with hot, almost boiling water. Let them soak for about 5–10 minutes, then drain well. Pat them dry before blending to avoid adding extra moisture.
Drain both the cashews and dates, then add to a high-speed blender or food processor along with the coconut and protein powder. Blend until everything comes together in a smooth, velvety cream.
Now it’s time to assemble the popsicles. Begin by spooning a thin layer of the cashew cream into each mold, then add a spoonful of the apple mixture. Keep alternating between the creamy and fruity layers until the molds are filled, creating a beautiful swirl of flavors and textures. Once the molds are packed, insert the sticks and place them in the freezer. Let them freeze for at least 4–6 hours, or until they’re firm and set.
When you’re ready to serve, gently remove the popsicles from their molds and enjoy the creamy, spiced apple flavor with each bite. These popsicles make a refreshing yet cozy treat, perfect for keeping in the freezer for whenever you need a naturally sweet pick-me-up. If you have any leftovers, simply store them in the freezer until the next time a craving strikes.

Julia TrigoHere's a cold, delicious spin on the apple pie called frozen apple pie bars (creamsicles). This health-minded treat uses a sweet apple filling and a rich cashew-coconut base alongside natural sweeteners.
1 apple, peeled, cored and chopped
¾ teaspoon ground cinnamon, divided
¼ cup pure maple syrup
2–3 tablespoons water
1 tablespoon almond butter
¾ cup cashews, soaked and drained
3–4 Medjool dates, pitted and softened
1 can (13.5 oz) coconut cream or full-fat coconut milk
1 ½ scoops Ancient Nutrition Cinnamon Vanilla Protein Powder
First make sure you soak the cashews in water for two hours. The dates should also be soaked, but in very hot water (near boiling) for 5 to 10 minutes.
Prepare the apple mixture. In a small saucepan, combine the apple, cinnamon (half a teaspoon), maple syrup, water and almond butter. Simmer gently over low heat for 10–15 minutes, stirring occasionally, until the apples are softened. Remove from heat and allow to cool completely.
Make the cashew cream base next. Drain the cashews and dates (pat dry). In a high-speed blender or food processor, combine the cashews, coconut cream, dates, protein powder and remaining ¼ teaspoon cinnamon. Blend until smooth and creamy.
Assemble the popsicles. Spoon a thin layer of the cashew mixture into the popsicle molds, followed by a layer of the apple mixture. Continue alternating layers until the molds are filled.
Insert sticks and freeze for at least 4–6 hours, or until fully set.
Gently remove the popsicles from the molds and enjoy. Store any leftovers in the freezer.
