Blue Spirulina Collagen Drink

When summer approaches, we increasingly look forward to drinking colorful drinks. In part it’s because we naturally crave fruits during the summer for their hydrating qualities and sweetness, particularly if we’re feeling hot from the weather and also want to replenish our energy stores after a workout.
It’s time to make your own unique summer drink! While you’ve seen your fair share of pink, orange and green drinks, what about light blue? This magical color isn’t artificial. It comes naturally from blue spirulina, a blue-green algae powder.
This blue spirulina drink with strawberries is a blast to make. It’s also a great post-workout drink or just a fun mocktail.
The star ingredient is yes, blue spirulina. Like green spirulina, blue spirulina is a type of blue-green microalgae that is able to grow in both fresh and salt water and is consumed by humans and other animals.
Research continues to uncover more potential benefits of nutrient-dense spirulina, and studies have shown that adding spirulina to your routine could help detox your body, boost energy levels and even enhance brain function.
Strawberries are also featured and bring some red into the blue! Most of the health benefits associated with strawberries are due to the presence of antioxidants, including anthocyanin and catechi.
Third on the list is our Multi Collagen Protein Vanilla supplement, which provides support for your skin, joints and gut. It’s also a delicious flavor that blends very well.
First make up the strawberry puree. Place strawberries, maple syrup and water in a medium saucepan over medium-high heat. Cover and bring to a boil, about five minutes. Uncover and boil for an additional five minutes. Set aside and allow to cool.
Pour the strawberry mixture into a blender and blend on high until smooth. Pour through a fine mesh strainer and set aside.
Make the blue spirulina layer next. In a blender, add in unsweetened almond milk, blue spirulina and maple syrup. Blend on high until combined.
Chill the bowl of a stand mixer for 10 minutes in the refrigerator. Add coconut cream to the bowl and whip on high for 30 seconds. (Or use a metal mixing bowl and a hand blender.) Add in the Multi Collagen Protein Vanilla and monkfruit sweetener and mix on high for one minute, stopping and scraping the bowl along the sides with a spatula until fully combined.
If using coconut milk, allow it to chill in the refrigerator overnight. Once cold, open the can and transfer only the thick and creamy part to the bowl (save the water part for another recipe). It’s recommended to purchase coconut cream and coconut milk that contains guar gum. This allows for a smoother cream to set.
Be aware that coconut whipped cream will harden and set in the refrigerator the longer it’s chilled and will keep for up to two weeks when stored in an airtight container.
Assemble the drink. Add in ice, one cup blue spirulina latte and a half-cup strawberry puree. Top with coconut whipped cream.
While the layers can be made up to two days ahead of time, this blue spirulina drink is best when made fresh.
