Passion Fruit Drink (or Mocktail)

Summertime is the best time for mocktails, when perhaps you want to avoid alcohol but want something fun and delicious to drink. This Passion Fruit Drink hits all the notes, but adds something extra: collagen!
It features the sublime guava passionfruit flavor for our Multi Collagen Protein Powder Beauty Within, one of our most popular flavors come summer (or anytime you want to feel like you're on a tropical island).
This collagen protein variety contains a phytonutrient beauty blend that supports overall skin health and skin elasticity. It's powered by a clinically studied fermented eggshell membrane collagen ingredient, for results in as little as one day — including reducing knee stiffness and joint discomfort in a week, improving appearance of crow's feet after 28 days, and promoting healthy hair thickness and growth while reducing hair breakage. Not bad, eh?
Another key to this passion fruit mocktail is it's relatively low in sugar, powered by a pineapple ginger simple syrup. This mixture of pineapple juice, ginger, monkfruit and cold water will wow your taste buds.
What is monk fruit sweetener? It comes from small, green fruit and contains compounds that, when extracted, are an estimated 200–300 times sweeter than regular cane sugar but with no calories and no effect on blood sugar.
Otherwise, for the drink itself, guava juice is called for. If you haven't tasted guava juice yet, you're in for a treat. With its sweet, tangy flavor, guava also is a top antioxidant food, supplying loads of vitamin C and lycopene in each serving. Passion fruit juice is also high in antioxidants and imparts a sweet-sour (or tart) taste and is highly aromatic.
For some healthy fats that make this passion fruit drink extra satisfying, it uses coconut milk.
First, make up the pineapple ginger simple syrup that is as good as it sounds. In a small saucepan, mix in pineapple juice, grated ginger, monkfruit sweetener and water. Heat over medium heat and allow to simmer until all sugar dissolves, about 5 minutes. Pour into a heat safe container with a lid and let cool completely in the refrigerator.
For the drink, in a blender, add in guava juice, passion fruit juice, coconut milk, cooled pineapple ginger simple syrup and guava passion fruit protein powder. Blend on high until smooth.
Pour the drink mixture over ice and serve.
Note: Pineapple simple syrup can be kept in a sealed container in the refrigerator for up to one week.

½ cup pineapple juice
2 inches ginger, peeled and grated
