Easy Chocolate-Covered Strawberry Popsicles

Popsicles are a refreshing summer treat, especially on hot days, but these days many of us avoid them because of the typical high-sugar or artificial sweetener content.
What if we told you that you can make yummy chocolate-covered strawberry popsicles without any added sugar but some collagen? Believe!
Strawberry Lemonade Multi Collagen Protein: One of Ancient Nutrition’s most popular collagen flavors, this subtlety sweet powder features 10 types of collagen and supports healthy hair, skin, nails, joints and the gut.
Strawberries: You can use fresh or frozen strawberries, just know that fresh, ripe strawberries will impart more sweetness. Along with the vitamin C in the collagen, strawberries help boost the vitamin C of each popsicle to 80 percent Daily Value.
Greek yogurt: Greek yogurt adds some probiotics plus assists with texture. You can also use coconut yogurt.
Coconut water: This popular summer beverage contains natural electrolytes and blends well with the strawberry lemonade collagen.
Dark chocolate chips: Aim to get 70 percent cacao dark chocolate chips, which contain just enough sweetness along with that inimitable chocolate flavor and feel.
As we promised, this one is easy. First, you’ll need a popsicle mold.
Add all the ingredients except for the chocolate chips to a power blender. Blend until smooth, then pour into the popsicle mold and place the popsicle stick. This recipe will make roughly four popsicles.
Place the popsicle-filled molds into the freezer for at least three hours.
About 20 minutes or so before you’re ready to turn these popsicles into chocolate covered, melt the chocolate chips. There are several different ways to melt chocolate.
The most popular are using a microwave, doing so in 20-second increments, and a double boiler with some water in the bottom pan. The latter will help bring gradual heat to warm the chocolate evenly and keep it relatively silky. If you are using a double boiler, add the water to the bottom pan and put on high heat. Then add the top pan with the chocolate chips. Stir the chocolate chips into they are melted, then immediately remove from the heat.
Let the chocolate cool a bit and pour into a large glass. Remove the popsicles from the freezer and dip each one in the chocolate. Enjoy right away or store in the freezer.

1 cup fresh or frozen strawberries
2 tablespoons Greek or coconut yogurt
1 cup coconut water
½ cup dark chocolate chips
Add all ingredients except for the chocolate to a blender. Blend until smooth.
Pour mixture into a popsicle mold. Set the popsicle stick.
Freeze for 3 to 4 hours.
Melt chocolate using a double boiler or microwave. Pour into a glass for dipping and let cool for a few minutes.
Take out popsicles from the freezer and dip popsicles in. Enjoy right away or store in freezer.
