Popsicles are a refreshing summer treat, especially on hot days, but these days many of us avoid them because of the typical high-sugar or artificial sweetener content.

What if we told you that you can make yummy chocolate-covered strawberry popsicles without any added sugar but some collagen? Believe!

How to make chocolate covered popsicles

As we promised, this one is easy. First, you’ll need a popsicle mold.

Add all the ingredients except for the chocolate chips to a power blender. Blend until smooth, then pour into the popsicle mold and place the popsicle stick. This recipe will make roughly four popsicles.

Place the popsicle-filled molds into the freezer for at least three hours.

About 20 minutes or so before you’re ready to turn these popsicles into chocolate covered, melt the chocolate chips. There are several different ways to melt chocolate.

The most popular are using a microwave, doing so in 20-second increments, and a double boiler with some water in the bottom pan. The latter will help bring gradual heat to warm the chocolate evenly and keep it relatively silky. If you are using a double boiler, add the water to the bottom pan and put on high heat. Then add the top pan with the chocolate chips. Stir the chocolate chips into they are melted, then immediately remove from the heat.

Let the chocolate cool a bit and pour into a large glass. Remove the popsicles from the freezer and dip each one in the chocolate. Enjoy right away or store in the freezer.
