You’ve likely tried many different types of chocolate chip cookies, but what about a skillet cookie that will keep you full for hours? That’s the story with this crazy delicious cookie that’s as much fun to make as it is to eat. Okay, kidding, it’s more fun to eat!

But because of the cast iron pan, it is fun to make. Recipes with a cast iron skillet are incredibly popular because they’re easy to make, tend to feature comforting foods and offer a natural, chemical-free nonstick surface (with proper seasoning). They also offer unusually even heat distribution.

Using some classic Paleo ingredients and Bone Broth Protein powder, this dessert dish comes together quickly and is not just yummy but also nutrient-dense. You’ll want to put this one on repeat.

What is a skillet cookie?

A skillet cookie (also known as a pizookie or cookie skillet) is a large, thick cookie baked in a cast-iron skillet instead of on a traditional cookie sheet. It has a chewy, gooey center — like cookie dough — and crispy, golden edges because of the even heat distribution of the skillet. It’s a bit like a blondie or cookie “bar,” but has its own features.

Key features of the skillet cookie:

  • Preparation: It’s idea to have a cast iron skillet for this recipe but you also make with a stainless-steel pan or other oven-safe frying pans.

  • Texture: Crispy on the outside, soft and molten in the middle.

  • Serving style: Usually served warm and straight from the skillet. Some choose to top with a scoop of vanilla ice cream that slowly melts into the cookie.

  • Presentation: It’s a cozy, shareable dessert, perfect for small gatherings. You can also cut out a portion, as this recipe yield 4 servings.

How to make a chocolate chip skillet cookie

First, if you’re using a cast iron pan, it’s important to use one that’s well seasoned. You also ideally use a smaller one.

To season it, coat with a thin layer of cooking oil, place it upside down in a preheated oven (around 450°F) on a baking sheet for an hour. Then let it cool completely inside the oven. Repeat this process three to four times to build up multiple thin layers of polymerized oil, which creates a slick, nonstick surface that prevents rust and helps performance.

If your pan is ready to go and clean, then you’re ready to get started. Preheat the oven to 350 degrees.

In a mixing bowl, add the wet ingredients: avocado or coconut oil, almond milk and vanilla extract. Mix well.

Add the dry ingredients — almond flour, Bone Broth Protein Salted Caramel, baking soda and dark chocolate chips — minus the flaky sea salt. Mix until combined.

Grease your pan with some oil and then press the cookie dough into the skillet, so it’s relatively even.

Place in the oven and bake for 15 to 2 minutes, or until golden brown.

Remove and let cool for 10 to 15 minutes. Be careful, as cast iron pan retain heat for a considerable time. Top with the flaky sea salt.

Serve by itself or top with a scoop or two of vanilla ice cream.

Ingredients
  • 3 tablespoons avocado or melted coconut oil (plus extra to grease pan)

  • ¼ cup almond milk

  • 1 teaspoon vanilla extract

  • ¾ cup almond flour

  • 2 scoop Salted Caramel Bone Broth Protein Powder

  • 1 teaspoon baking powder

  • ⅓ cup dark chocolate chips

  • flaky sea salt

  • vanilla ice cream to add on top (optional)

Directions
  1. Add all wet ingredients to a small bowl. Mix until combined.

  2. Add in the dry ingredients except for flaky sea salt and mix again.

  3. Grease the small skillet with oil. Press cookie dough into the skillet.

  4. Bake at 350°F for 15-20 minutes, or until golden brown.

  5. Remove from oven and let cool for at least 10 minutes.

  6. Top with flaky sea salt and ice cream.
