Caesar Salad Dressing Recipe

Did you know that Caesar salad is actually named after a chef, Caesar Cardini, who created the dish in a rush to throw together a salad with the ingredients on hand? Unfortunately, he didn't have a lot on hand and certainly didn't have nutrition in mind.
With just romaine lettuce, croutons, a creamy dressing and Parmesan cheese, there’s a serious lack of filling, fiber-rich ingredients or protein (aka the things that will help you feel full and satiated).
Instead, make your croutons out of toasted no-flour Ezekiel bread, use baby kale or spinach instead of Romaine lettuce, toss in some pecans or walnuts, grill some chicken or fish and add, and use Pecorino cheese (an Italian cheese made from sheep's milk). And don't forget those capers (you'll use the brine in the dressing)!
Lastly, use this delicious Caesar dressing recipe, which features our new Herbal Cider Vinegar, a spin on apple cider vinegar but with 10+ superfoods.
Garlic cloves: It's particularly high in certain sulfur compounds that are believed to be responsible for its scent and taste, as well as its very positive effects on human health.
Greek yogurt: This type of yogurt is made by combining milk and live cultures (bacteria), then straining the mixture through a filter to remove the liquid whey that naturally occurs in milk. Make sure you get the traditional kind without any thickening agents. You can also use goat Greek yogurt.
Dijon mustard: It surprisingly is an excellent source of many nutrients, including dietary fiber, calcium, iron, magnesium and potassium. Dijon mustard also imparts a tangy and sharp flavor with a touch of spice.
Herbal Cider Vinegar: This first-of-its-kind formula combines apple cider vinegar with over 10 organic, regenerative superfood ingredients, most of which are grown on our own organic, regenerative farmland.
Brine from capers: Essential for flavor.
Lemons: Lemons add that bittersweet flavor that no mocktail should be without, and they're an excellent source of vitamin C, antioxidants and fiber.
Pecorino cheese: Eaten since ancient Roman Times, it’s one of Italy’s oldest cheeses and still made today using the original recipe. It's made from sheep milk.
Olive oil: Real, high-quality extra virgin olive oil has well-researched anti-inflammatory compounds, antioxidants that fight free radicals and numerous heart-healthy macronutrients.
With a cutting board, chop up four garlic cloves. Then, in a medium bowl, add the garlic, Greek yogurt, dijon mustard, Herbal Cider Vinegar, caper brine, salt, pepper, and Pecorino cheese and whisk until smooth.
Stream in the olive oil and continue whisking until a creamy dressing of your liking forms. Season to taste.
Dressing can be stored in an airtight container in the refrigerator for up to two weeks.

4 garlic cloves, minced
½ cup Greek yogurt
2 tablespoons Dijon mustard
2 teaspoons or 5ml Herbal Cider Vinegar
2 teaspoons brine from capers
½ teaspoon sea salt
½ teaspoon cracked black pepper
1 lemon, juiced
⅓ cup freshly grated Pecorino cheese
⅓ cup olive oil
In a medium bowl, add garlic, Greek yogurt, dijon mustard, Herbal Cider Vinegar, caper brine, salt, pepper, and parmesan cheese and whisk until smooth.
Stream in the olive oil and continue whisking until a creamy dressing of your liking forms. Season to taste.
Dressing can be stored in an airtight container in the refrigerator for up to 2 weeks.
