It’s the latest fall trend inspired by a couple of well-known chains that a lot of people can’t get enough of — well, except for some of the ingredients, the high sugar content (one includes 31 grams) and the money you need to shell out. Instead, why not make your own pumpkin cream cold foam, with some added protein and without all the sugar? It’s a lot easier than you think.
This recipe for pumpkin cream cold foam also comes with macros to scream for: 4 grams of carbohydrates, 2 grams of fat and 11 grams of protein.

Cold whole milk or barista oat milk: Whole milk provides protein, calcium and other essential nutrients while creating a rich, creamy foam. Barista oat milk offers a dairy-free alternative specifically formulated to froth well, with a naturally smooth texture and mild sweetness.
Multi Collagen Protein Pumpkin Cream: It adds collagen peptides and seasonal pumpkin flavor to the foam while providing a convenient source of protein. It blends easily into the milk, turning an everyday coffee topping into a more functional addition.
Vanilla extract: A small splash of vanilla adds warmth and enhances the sweet pumpkin and spice flavors without requiring much additional sweetener.
Cinnamon or pumpkin pie spice: A dash of cinnamon or pumpkin pie spice brings classic fall flavor while contributing beneficial plant compounds and antioxidants.
Maple syrup, monk fruit or stevia: These optional sweeteners let you customize the cold foam to your taste. Maple syrup provides traditional sweetness and flavor, while monk fruit or stevia can add sweetness with little to no sugar.

The milk provides the base and helps create the foam, while the collagen powder adds protein and pumpkin flavor, and vanilla, spices and your sweetener of choice round everything out.
Making pumpkin cream cold foam at home couldn't be easier. With just a handful of ingredients and a milk frother, you can create a creamy, pumpkin-spiced topping that's perfect for turning an everyday iced coffee into a fall-inspired treat.
Start by pouring cold whole milk or barista oat milk into a small glass or frothing cup. You can go with a filtered milk like Fairlife®. Keeping the milk cold is important, as it helps create a thicker, more stable cold foam.
Next, add the Multi Collagen Protein Pumpkin Cream and a splash of vanilla extract. If you'd like to boost the warm fall flavors even further, add a dash of cinnamon or pumpkin pie spice. Stir everything together briefly before frothing to help the collagen powder dissolve evenly into the milk.
For a sweeter pumpkin cream, add a small amount of pure maple syrup to taste. For a lower-sugar option, use monk fruit or stevia instead. Because the pumpkin collagen powder does offer some sweetness, you may find that you don't need any additional sweetener at all.
Using a handheld milk frother, froth the mixture for about 30 to 60 seconds, moving the frother slightly up and down until the mixture becomes creamy and foamy. You can also use an electric frother with a cold-foam setting.
